The birth of In Wine Inc. dba Old Oak Cellars

It all began in 2007 when Paul Overholt attended the UC Davis Oenology and Viticulture Certification program. The key point was learning that modern science – and good California terroir – could be relied upon to be the bedrock of great winemaking.

Paul then spread the good news about science driving California winemaking with neighbor Dave Lustig who brought 20 years of winemaking experience and a similar lust for science driven work to the table. Step-Brother Gregor Nils Linde, has a degree in Business Marketing management and has been involved making amateur wine at the family vineyards for 20 years. Brother Elwood brings an ag. science background (B.S. UC Davis, M.S. SLU Uppsala) to the group. All immediately signed on to make wine. And so with winemaker Paul Overholt as our leader we set off to launch our wine company incorporated as In Wine, Inc.

We start with our fine Alexander Valley Merlot and Cabernet Sauvignon grapes. Then we process and ferment the grapes at the Old Oak Winery in Santa Rosa, CA. We create our wines with the highest quality equipment and lavish great quality control care with each step.
